Il s\u2019agit d\u2019une soupe \u00e9paisse \u00e0 base de pommes de terre et de haricots. Cependant, en combinant d&rsquo;autres ingr\u00e9dients, des chefs cr\u00e9atifs ajoutent un go\u00fbt distinctif et une touche de magie gastronomique \u00e0 leur propre mane\u0161tra. Le nom de chaque mane\u0161tra d\u00e9pend de l\u2019ingr\u00e9dient principal. Le plus souvent, on ajoute dans la marmite du jeune ma\u00efs, des pois chiches, de l&rsquo;orge, de la choucroute, des betteraves marin\u00e9es ou du jeune fenouil. Ce grand crustac\u00e9, \u00e0 la chaire tendre et douce, peut se pr\u00e9parer de biens des mani\u00e8res, mais il est particuli\u00e8rement adapt\u00e9 \u00e0 la pr\u00e9paration de salades ou de d\u00e9licieuses sauces pour le risotto ou les p\u00e2tes.<\/p>\n\n\n\n<p><strong>SARDINES GRILLEES \u2013 <\/strong>ces poissons gras qui ont nourri pendant des si\u00e8cles les nombreuses familles de p\u00eacheurs sont une autre saveur maritime sp\u00e9cifique de l\u2019Istrie que vous devrez absolument go\u00fbter lors de votre s\u00e9jour sur la Riviera de Medulin. Le plus souvent on les pr\u00e9pare de la mani\u00e8re la plus simple qui soit : du filet des p\u00eacheurs elles arrivent directement sur le grill. Mais si vous en avez l\u2019opportunit\u00e9, ne manquez pas de go\u00fbter aussi les d\u00e9licieuses sardines en sauce. Ces c\u00e9phalopodes marins occupent une place particuli\u00e8re dans la cuisine traditionnelle d&rsquo;Istrie. La seiche est l\u2019ingr\u00e9dient principal de nombreuses recettes. Nous vous recommandons particuli\u00e8rement le risotto noir, un plat simple \u00e0 la saveur irr\u00e9sistible qui ravira certainement tous les amoureux des d\u00e9licieux fruits de mer.<\/p>\n\n\n\n<p><strong>RAGOUT DE POISSON \u2013<\/strong> un autre plat de p\u00eacheurs typique qui faisait autrefois partie de la cuisine populaire, et qu\u2019on retrouve aujourd&rsquo;hui r\u00e9guli\u00e8rement sur le menu des restaurants de luxe le long de la c\u00f4te adriatique. Il est compos\u00e9 d\u2019un m\u00e9lange de poissons fra\u00eechement p\u00each\u00e9s, et on y ajoute souvent quelques crustac\u00e9s ou diff\u00e9rents types de fruits de mer. Presque chaque restaurateur poss\u00e8de sa propre recette de rago\u00fbt de poisson, qu\u2019il garde jalousement. Le rago\u00fbt est habituellement servi avec du gruau de ma\u00efs, de la polenta. Les plus c\u00e9l\u00e8bres sont les fu\u017ei, les pasutice et les tagliatelles fraiches qui sont fabriqu\u00e9es \u00e0 partir de farine et d\u2019\u0153ufs, ainsi que les boulettes de pommes de terre traditionnelles, commun\u00e9ment appel\u00e9es gnocchi. Ces p\u00e2tes sont particuli\u00e8rement savoureuses lorsqu&rsquo;elles sont associ\u00e9es \u00e0 diff\u00e9rentes sauces maison.
